Homemade Amish Noodles

1 1/2 cups flour

1 tsp slat

1 tsp butter or fat

3 tbsp water

1 egg

1. Make a well in the flour and add the egg, salt and fat. Rub together and add water until you have a stiff dough. Knead until well mixed but not too dry.

2. Divide the dough in to three parts for easy handling. Roll each as thick or thin as you want, but remember that thicker noodles tend to fall apart if too thick.

3. Spread the rolled dough on to a cloth and allow to dry a little. Roll the dough in a loose jelly roll style and slice lengthwise to make strips.

4. Use as packaged noodles or leave to fully dry and store in an airtight container.
