I think it is, but I'm a bit impartial. I do usually add a little extra brown sugar since I love the taste of molasses.

I've been doing jar cakes on and off for a few years, but not very often. You're right, they're not very well known anymore although I've found quite a number of old cookbooks, especially homemade ones, that are filled with scores of them. I say we start a revolution!

Shelf life I'm still sketchy on. I think really that it depends on ingredients but they should last at least a couple of months if done right and properly cooked. I don't really know for sure, though, since it seems none of them seem to survive more than a few days in my home. Yum.

Wow, this is an amazing tip and I'm definitely going to try it! Thanks so much!
There is nothing like genuine cast iron. I actually found mine at Salvation Army for about $8 and the thing would normally cost around $45 I'm sure. Love that!

Have you ever baked sweets in the cast iron, besides cornbread? I am interested in unusual containers for baking. It's how I got obsessed with baking in mason jars, and "canning" my cakes and brownies! You can check out what I mean here: EmilysEdibles.etsy.com

I look forward to reading more of your posts!

This is a great recipe I am definitely going to try.
How experienced are you with jar cake baking? I got into it a couple months ago and have honestly become obsessed. I actually started selling my jar cakes and brownies on Etsy. It's pretty exciting and I'm just getting started but always keep my eye out for new ideas, recipes, or anyone in the world who has actually HEARD of jar cakes!! They seem to be fairly unknown. Have you found that to be true?

***How long is the shelf life? I have heard from 10 days to three months, to six months! I will have to wait it out to test my own, maybe 10 more weeks before the pop open and meet my fate. :)
