People who know me also know that there are certain countries and cultures I’m very intrigued by. India, Italy, Australia, Japan and New Zealand pop up first in my mind. The odd thing is of them all New Zealand really doesn’t get enough coverage; just a bit under Australia, which doesn’t get enough exposure either.

So I’m going crazy ( crazier ) trying to find some good traditional/indigenous/one of a kind food footage and recipes from Aotearoa. In the process I found this:

It’s a traditional Maori hangi. Basically, it’s building a giant firepit, heating up rocks in the fire, cooking food in covered baskets, and chowing down. Feasting, friends, and good times are universal.

Now that’s what I’m talking about!…….well, in theory. The details need a bit smoothing.

1 Cup Heavy Cream

1 Tablespoon Sugar

6 Pre-made meringue shells or spoge cake cups

3 Kiwifruits, pared and sliced

1) Beat the cream until you get soft peaks forming then fold in the sugar. Spoon into meringue/cake shells.

2) Slice the kiwi slices in half and arrange them however you like over the whipped cream.

3) Enjoy!

This is such an easy and yummy treat you’re going to want to make it all the time. It’s always good to keep frozen shells on hand if you can find them. I’ve seen heavy cream available in long-life pantry storage, like boxed milk, but it seems a bit tricky to find it. Keep an eye on the links because I’ll try to post any to these ingredients if i can find it. 

PS – Of all the types of kiwi fruit I’ve found the best I’ve worked with is the Zespri.
