Sour Cream Raisin Pie

Of all my raisin pie recipes this one tends to be my favorite.
1 cup raisins
1/2 cup sugar
1 1/2 Tbsp flour
1/8 tsp salt
2 eggs, separated
1 cup sour cream
1 tsp cinnamon or lemon juice – can do half and half
9 inch crust, nicely baked to golden

Quakertown Raisin Pie

1 cup raisins
2 cups water
1/2 cup sugar
1 egg
3 1/2 Tbsp flour or minute tapioca
1/4 tsp salt
1 Tbsp butter
2 Tbsp lemon juice
1 tsp grated lemon rind
9 inch pastry crust, pre-baked to golden – I prefer this one

Sweet Potato Pie

2 large sweet potatoes
2 egg whites, beaten
1 tbsp sugar
1/4 cup rasins
1/2 tsp cinnamon
2 tbsp butter, softened
1 cup milk
9 inch pie crust
1) Wash potatoes carefully then cook in covered saucepan until soft. Peel and mash in to a medium sized bowl.

2 1/2 cups pineapple, crush and drained if canned
2 tbsp cornstarch
1/2 c sugar
1/4 tsp salt
1 tbsp butter
1 tbsp lemon juice
